Is anything more classic and comforting than homemade apple pie? These 5 Spice Mini Apple Pies can fit in the palm of your hand, and they pack all of the flavors of a traditional apple pie: they’re perfectly sweetened, warm with the flavor of cinnamon, and buttery (thanks to the puff pastry).
- 2 sheets puff pastry
- 3 large apples
- 3 tbsp sugar
- 6 tbsp light brown sugar
- 1 tbsp + 1 tsp 5 Spice Powder
- 1 tbsp lemon juice
- ¼ cup + 2 tbsp water
- 2 tbsp cornstarch
- 1 egg

Apple pie just takes the cake when it comes to fall desserts, don’t you agree? And these 5 Spice Mini Apple Pies are a fun-sized take on the classic, which still bring all of the flavor and soul-warming goodness.
Start by taking your puff pastry out of the freezer to thaw, and start peeling and dicing your apples (tip: it’s best to use a variety of sweet and tart apples). Add to a saucepan, along with sugar, light brown sugar, 5 Spice Powder, lemon juice, and water. After combining, set over medium heat for 10 minutes.
Then, whisk cornstarch and water, and add this mixture to the saucepan, until everything thickens. Remove from the heat, let it cool completely, and preheat your oven to 400℉. After that, whisk an egg in a bowl and set aside, and in a separate bowl, mix light brown sugar with 5 Spice Powder. Set this aside.
Now, unfold the thawed puff pastry and place on a work surface. Roll it, and cut into even rectangles. Spoon the apple pie filling into each rectangle (leaving a ½ inch border). Then, brush the border with the egg wash, and top with more puff pastry. You might need to stretch the dough gently.
Crimp the edges with a fork, cut slits into the top of each pie, and brush with an egg wash. Finish these off by adding a sprinkle of light brown sugar and the 5 Spice Mixture, before baking. Let them cool slightly before serving.

Step by Step Instructions
Step 1
Remove 2 sheets of frozen puff pastry from the freezer and set out to thaw.
Step 2
Peel and dice 3 large apples into ⅓” cubes. Add to a large saucepan.
Note: If possible, use a variety including sweet apples and tart apples.
Step 3
To the saucepan, add 3 tablespoons of sugar and 3 tablespoons of light brown sugar.
Step 4
To the saucepan, add 1 tablespoon of 5 Spice Powder, 1 tablespoon of lemon juice and ¼ cup of water. Stir to combine, then set over medium heat for 10 minutes, stirring occasionally.
Step 5
In the meantime, whisk 2 tablespoons of cornstarch with 2 tablespoons of water.
Step 6
After cooking the apples for 10 minutes, add the cornstarch slurry and cook for an additional minute, stirring constantly until the mixture thickens. Then remove from the heat to cool completely.
Step 7
Preheat the oven to 400℉.
Step 8
Whisk 1 egg in a bowl and set aside.
Step 9
In a separate bowl, mix together 3 tablespoons of light brown sugar with 1 teaspoon of 5 spice powder and set aside.
Step 10
Unfold the thawed puff pastry and place on a lightly floured work surface. Roll it out to approximately 12×12”. Cut each puff pastry into 8 even rectangles.
Step 11
Arrange 8 of the rectangles onto a baking sheet. Spoon a generous mound of the apple pie filling onto each rectangle, leaving about a ½” border.
Step 12
Brush the border of the rectangles with the egg wash and top with the remaining puff pastry rectangles. You may have to stretch the dough gently with your hands in order to match the edges.

Crimp the edges with a fork all the way around, then using a sharp knife, cut 3 slits into the tops of each pie.
Step 14
Brush the egg wash over the tops of the pastries and heavily sprinkle with the light brown sugar and 5 spice mixture.

Place into the oven and bake for 20-22 minutes or until golden brown.

When finished, remove the apple pies from the oven and let cool slightly before serving.
