When temps are high, just about nothing is more satisfying than a crisp summer salad. This Spinach & Berry Summer Salad with a Beaujolais wine dressing is chock full of your favorite berries, along with goat cheese and pistachios, and is topped with a classic & flavorful Beaujolais dressing.

Summer meals can be tricky: when an oven and the burners are on, it can be hard to stick around a hot kitchen for too long. But this Spinach & Berry Summer Salad with a Beaujolais wine dressing ticks all of the boxes. It’s hearty, light, sweet and totally refreshing.
Start by cleaning your baby spinach and adding it to a large bowl. Next, clean your blackberries, blueberries, and strawberries, and add them to the bowl as well. Slice your red onion, add that in, and crumble goat cheese into the bowl. Add in your pistachios, and the base of your salad is ready to go.
Up next is the Beaujolais wine dressing. Grab a mason jar, and add in olive oil, Beaujolais wine, lemon juice, and mustard. Next, add your honey, lemon zest, kosher salt, black pepper, and minced garlic. Close your jar tightly and shake it vigorously, for a few seconds.
When you’re ready to enjoy, add your dressing to your salad.

To prepare the salad, clean and add 12 oz of baby spinach to a large bowl.

Clean and add 6 oz of blackberries to the bowl.

Clean and add 5 oz of blueberries to the bowl.

Clean, slice and add 8 oz of strawberries to the bowl.

Slice and add ¼ of a red onion to the bowl.

Crumble and add 4 oz of goat cheese to the bowl.

Add ¼ cup of shelled pistachios to the bowl.

To prepare the dressing, in a mason jar, add ½ cup of olive oil.

Add ⅓ cup of beaujolais wine to the jar.

Add 2 tablespoons of lemon juice to the jar.

Add 2 tablespoons of yellow mustard to the jar.

Add 1 tablespoon of honey to the jar.

Add ½ teaspoon of lemon zest to the jar.

Mince and add 1 clove of garlic to the jar.

Cap the mason jar tightly and shake vigorously for 15 seconds to combine.
Note: To prevent sogginess, serve the dressing on the side.
