Instant Pot Sushi Rice

Sushi rice isn’t the same as any old rice. It’s sticky, a bit tender, and seasoned with the flavors of rice vinegar and a touch of sugar. And this Instant Pot Sushi Rice will give you homemade sushi rice in a pinch.

Instant Pot Sushi Rice

Sushi rice is a handy thing to have at home. Whether you want to do a sushi night for dinner with the family, you want to enjoy it alongside a stir-fry, or you have another creative use for it, sushi rice can be a useful (and tasty) dish to have around. And this Instant Pot Sushi Rice recipe is low-touch, and leaves you with perfectly prepared sushi rice in less than 30 minutes.
To start, rinse your Japanese short grain white rice under cool water to remove the excess starch. Drain well, and place the rice into the pot of your pressure cooker. Add water, and close the lid, before cooking on high pressure for 10 minutes. Then, allow for at least 10 minutes of natural release.
While the rice cooks, take a small bowl, and combine white wine vinegar, rice vinegar, and olive oil. Also add cane sugar and salt, mixing until dissolved.
When the rice is finished, fluff with a fork and transfer to a bowl, before pouring the vinegar mixture over the rice. Gently combine, and enjoy!

Step by Step Instructions
Step 1
Thoroughly rinse 1 & 1/2 cups of Japanese short grain white rice in a fine mesh strainer under cool running water to remove the excess starch. Drain well and place into the pot of an instant pot cooker.
Step 2
Add 1 & 1/2 cups of water and close the instant pot lid. Cook on high pressure for 10 minutes, then allow for at least a 10 minute natural release.
Step 3
While the rice is cooking, in a small mixing bowl, combine 3 tablespoons of white wine vinegar, 3 tablespoons of rice vinegar and 1 & 1/2 tablespoons of olive oil.
Step 4
Continue to add to the bowl, 3 teaspoons of cane sugar and ½ teaspoon of salt. Mix until the salt and cane sugar are dissolved.
Step 5
When the rice is done, fluff with a fork and transfer to a bowl. Pour the vinegar mixture over the rice and gently mix to combine. Use the sushi rice to make sushi rolls, poke bowls or sushi donuts.
