Time to break out your Insta Pot, we have an amazing recipe for you. These Insta Pot Tacos Al Pastor are tender and tasty. You end up with mouthwatering pork tacos, flavored with chipotles, adobo sauce, and pineapple.

Jalapeño & Roasted Tomatillo Hot Sauce
Ingredients
  • 1 pineapple
  • 1 white onion
  • 3 cloves garlic
  • 3 chipotles in adobo sauce
  • 2 tbsp adobo sauce
  • 1 tbsp chili powder
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp ground cinnamon
  • ½ tsp dried oregano
  • ⅛ tsp ground cloves
  • 2 pounds pork shoulder
  • Corn tortillas
  • Garnish cilantro

Insta Pot lovers, we get it: these kitchen gadgets can really work wonders. And if you’re a fan of tacos, then this Insta Pot Tacos Al Pastor recipe is perfect for you. You’ll start by prepping a pineapple, finely dicing it, and adding half to a blender (set the rest aside). Do the same with your onion, and then add garlic, chipotles, adobo sauce, and spices to the blender. Mix this on a high speed until it’s fully incorporated (this is your marinade).


Then, trim the pork, and place it into your pot. Add your marinade to the pot as well, and cook this for one hour. When your pork is finished, rough chop it into strands, then bake it in the oven for about 10 minutes (don’t forget to spoon some marinade on top). After this is done, serve immediately on corn tortillas, garnishing with that leftover onion, pineapple, and some fresh cilantro.

Step by Step Instructions

Step 1

Remove the crown, base and core from 1 pineapple and discard.

Step 2

Finely dice 1 cup of the pineapple and set aside. Place the remainder into a blender.

Step 3

Cut 1 white onion in half. Finely dice half of it and set aside. Place the remaining half into the blender.

Step 4

Peel 3 cloves of garlic and add to the blender.

Step 5

To the blender, add 3 chipotles in adobo sauce plus an additional 2 tablespoons of adobo sauce.

Step 6

To the blender, add 1 tablespoon of chili powder and 1 tablespoon of apple cider vinegar.

Step 7

To the blender, add 1 teaspoon of sugar and 1 teaspoon of salt.

Step 8

To the blender, add ½ teaspoon of smoked paprika, ½ teaspoon of ground cumin, ½ teaspoon of ground cinnamon, ½ teaspoon of dried oregano and ⅛ teaspoon of ground cloves. Blend all of the ingredients on high speed until incorporated.

Step 9

Trim the excess fat and cube 2 pounds of pork shoulder into 2 inch chunks.

Step 10

Place the pork into your insta pot and pour the marinade, the contents of the blender, into the pot. Mix to combine and then set your cooker for 1 hour.

Step 11

When the pork is finished cooking, transfer to a cutting board and rough chop into strands. Line a baking sheet with aluminum foil and place the pork onto it.

Step 12

Spoon approximately ¾ cup of marinade from the insta pot over the pork. Place an oven rack in the third position down from the top and broil the pork on high for approximately 10 minutes.

Step 13

Serve the pork immediately on corn tortillas with the reserved white onion and pineapple. Garnish with fresh cilantro.
