Zucchini is perfect for grilling, and while this vegetable is tasty enough on its own, this recipe takes things up a notch. This grilled zucchini with sumac has a delicate tang you won’t forget, and that we guarantee you’ll want more of.

  • 4 zucchini

  • 2 tbsp olive oil

  • ½ tsp coarse salt

  • ¼ tsp ground black pepper

  • ¼ tsp garlic powder

  • 1 tsp sumac

Simple recipes are sometimes the best recipes. This grilled zucchini with sumac is the perfect side dish to any meal, and is bound to be a crowd-pleaser. It gets a notable tangy and lemony flavor from sumac, a vibrant Middle Eastern spice that we love keeping on hand.

To make this grilled zucchini with sumac, you’ll preheat a grill while trimming your zucchinis. Then, you’ll drizzle and rub some olive oil on the zucchinis, before placing them flesh-side down on the grill. After that, you’ll simply season with salt, pepper, garlic powder, and of course, sumac. Garnish with finely chopped parsley, and this dish is ready to eat.

Step by Step Instructions

Step 1

Preheat a gas or charcoal grill to high direct heat.

Step 2

Clean and trim the ends of 4 zucchinis.

Step 3

Cut each zucchini lengthwise into quarters.

Step 4

Lay zucchini sticks on a large baking pan, then drizzle and rub in 2 tablespoons of olive oil.

Step 5

Once the grill is ready to go, place zucchini on the grill, flesh side down.

Step 6

Grill for approximately 5 minutes or until there are clear grill marks on the flesh.

Step 7

Flip the zucchini and grill the other flesh side for approximately 5 minutes.

Note: If you find some zucchini are cooking faster than others, it is best to remove those from the grill to prevent overcooking.

Step 8

This step is optional. You may grill the skin side of the zucchini for 1-2 minutes if you prefer your zucchini a bit more cooked than crunchy.

Step 9

Transfer zucchini back to the baking dish and add ½ tsp of coarse salt, ¼ tsp of ground black pepper, ¼ tsp of garlic powder and 1 tsp of sumac.

Step 10

Once seasoned, stack the zucchini on a serving platter and garnish with finely chopped parsley.
