There’s nothing quite like a freshly-made doughnut, and these old fashioned doughnuts with a star anise and creme fraiche glaze are next level delicious.
- 3 Tbsp Butter
- 1 & ¾ Cups Flour
- 1 & ½ Tsp Baking Powder
- ½ Tsp Ground Cinnamon
- ¾ Tsp Salt
- 1 Star Anise Pod
- ½ Cup Sugar
- 2 Egg Yolks
- ½ Cup Creme Fraiche
- 1 Tbsp Milk
- 1 & ½ Cups Powdered Sugar
- 4 Tbsp Maple Syrup
- 1 Tbsp Lemon Juice
- 2 Inches Canola Oil
- Lemon Zest
How to prepare old fashioned doughnuts at home
The recipe is simple to follow, and the results are absolutely worth the effort. The doughnuts are crispy on the outside and soft on the inside, with a gentle flavor of star anise that’s complemented perfectly by the sweet maple lemon glaze. Whether you’re making them for breakfast, brunch, or dessert, these old fashioned doughnuts are sure to please. So go ahead and give them a try – you won’t be disappointed!
Step by Step Instructions
Step 1
Soften 2 tablespoons of butter in the microwave or leave out for approximately 45 minutes until soft.
Step 2
In a medium bowl, whisk together 1 ¾ cups of flour, 1 ½ teaspoons of baking powder, ½ teaspoon of ground cinnamon and ¾ teaspoon of salt.
Step 3
Using a mortar and pestle or spice grinder, process 1 star anise pod into a powder and whisk into the mixing bowl. Set aside.
Step 4
Add the softened butter to the bowl of a stand mixer, fitted with the paddle attachment, and add ½ cup of sugar and beat the mixture until sandy.
Step 5
Add 2 large egg yolks and continue mixing until light and fluffy, about 2 minutes.
Step 6
Add the dry ingredients to the mixing bowl in 3 additions, alternating with ½ cup of creme fraiche until all ingredients are incorporated and you have a smooth but slightly sticky dough.
Step 7
Cover with plastic wrap and chill for 1 hour or until firm.
Step 8
While the dough is chilling, make the glaze by heating 1 tablespoon of butter and 1 tablespoon of milk in a small saucepan until just melted. Remove from heat.
Step 9
In a medium bowl, mix together 1 ½ cups of powdered sugar, 4 tablespoons of maple syrup, 1 tablespoon of lemon juice and the warmed milk and butter.
Step 10
Pour 2” of canola oil into a heavy bottomed pot with a deep-fry thermometer attached and begin heating to a temperature of 370 degrees fahrenheit.
Step 11
On a floured surface, roll out the dough to about ½ thickness. Using a doughnut cutter, cut out as many doughnuts as possible, dipping the cutter into flour as necessary to prevent sticking.
Step 12
Once the oil has heated, add the doughnuts a few at a time, and fry on each side for approximately 1-2 minutes until a dark golden brown.
Step 13
Transfer the cooked doughnuts to a paper towel lined plate to soak up excess oil.
Step 14
When the doughnuts are still warm but manageable to touch, dip them in to the icing and set on a wire rack to cool. Top with lemon zest while still warm.
