Nothing hits the spot quite like a freshly baked banana bread. But when you’re ready for a tasty spin on this beloved classic, this Butterscotch Banana Bread with a Buttermilk Glaze has your name all over it. Butterscotch chips give this bread the deep sweetness of caramelized sugar, which is then finished off with a quick-and-easy homemade buttermilk glaze drizzle.

Step by Step Instructions
Step 1
Line a 9×5” loaf pan with parchment paper and set aside.
Step 2
Adjust oven rack to lower-middle position and preheat to 350℉.
Step 3
Peel 3 very ripe bananas and place in a medium size bowl.
Step 4
To the bowl, add ¼ cup of sour cream, 2 large eggs and 1 teaspoon of vanilla extract. Mash all of the ingredients together.
Step 5
In the bowl of a stand mixer, add 1 ¼ cups of all-purpose flour.
Step 6
To the stand mixer, add ½ cup of virgin coconut oil and ½ cup of sugar.
Step 7
To the stand mixer, add ½ teaspoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt and ½ teaspoon of cinnamon.
Step 8
To the stand mixer, add ¼ teaspoon of ground cloves and ⅛ teaspoon of grated nutmeg.
Step 9
Mix on low with the paddle attachment until the texture resembles a mealy powder.
Step 10
Add in the banana mash and continue mixing, just until no dry flour remains.
Step 11
Fold in ½ cup of butterscotch chips with a flexible spatula and pour into your prepared loaf pan.
Step 12
Place the pan into the oven and bake for 70 minutes or until well risen and golden brown.
Note: If you have an instant read thermometer, shoot for an internal temperature of 206℉.
Step 13
Once cooked, remove from the oven and cool completely on a wire rack.
Step 14
While cooling, in a small mixing bowl, add 2 cups of confectioner’s sugar with ¼ cup of buttermilk. Mix well, then drizzle the glaze over the loaf.
Note: Banana bread will keep for up to 3 days at room temperature or a week in the refrigerator.
