Buttermilk French Toast

When it comes to breakfast, just about nothing is more classic than Buttermilk French Toast. To start this recipe, you’ll preheat the oven to 250. If you’re using fresh bread, you’ll toast the pieces lightly, and if the bread is a little stale, you’ll skip that step. Then, in a large bowl, mix your eggs, egg yolks, and buttermilk. Add in your dark brown sugar, honey, and cinnamon, and then your spices, like ginger and nutmeg.
After that, add your vanilla and almond extract to the bowl, before soaking slices of bread in the mixture. After letting your bread soak for 5-10 minutes, heat up coconut oil in a nonstick pan, and add your soaked bread to the skillet. After both sides of the bread are golden brown, transfer to a rack in the oven, to keep warm while you cook the remaining pieces of bread.
Top with maple syrup and fresh fruit if you desire, and enjoy!

Step by Step Instructions
Step 1
Preheat the oven to 250℉.
Step 2
If using fresh bread, arrange 8 slices of thick sliced bread in a single layer on a rack and toast lightly, about 20 minutes. If the bread is stale, you can proceed to the next step.

In a large mixing bowl, add 4 eggs, 2 egg yolks and 1 ½ cups of buttermilk
Step 4
To the mixing bowl, continue adding 3 tablespoons of dark brown sugar, 1 tablespoon of honey and 2 teaspoons of cinnamon.
Step 5
To the mixing bowl, continue adding ¼ teaspoon of ground star anise, ¼ teaspoon of ground ginger, ¼ teaspoon of grated nutmeg and ¼ teaspoon of kosher salt.
Step 6
To the mixing bowl, continue adding ¼ teaspoon of vanilla extract and ¼ teaspoon of almond extract. Whisk well to blend.
Step 7
Soak 2-3 slices of bread in the egg mixture until completely saturated. About 5-10 minutes.
Step 8
Heat 1 tablespoon of coconut oil in a large non-stick pan over medium heat.
Step 9
Add the soaked bread to the skillet and cook, until browned on the bottom side, about 3 minutes. Flip and continue to cook until browned on the other side.
Step 10
Transfer the french toast to a rack in the oven to keep warm while you repeat the process for the remaining bread.

Allow each slice of bread to warm in the oven for at least 10 minutes to ensure it is fully cooked through.

Serve with maple syrup and fresh fruit if desired.
