Roasting bone marrow is a culinary adventure that few cooks attempt. Often found as an appetizer on the menu of fine dining restaurants, we’re demystifying the dish for any cook to prepare at home. Not only is this recipe packed with flavor, it is also highly nutritious with high amounts of collagen and glucosamine.
- 1 Shallot
- ¼ Tsp Fresh Ginger
- 1 Tsp Olive Oil
- 1 Tbsp Brown Sugar
- ⅓ Cup White Wine Vinegar
- 2 Tbsp Golden Raisins
- ½ Pear
- ¼ Tsp Salt
- 6 Marrow Bones
- Black Pepper
- Handful Of Parsley
- Baguette Slices
How to prepare beef bone marrow for cooking
Ask your butcher to cut your beef bone marrow lengthwise. You’ll want to soak the beef bone marrow in salt water for roughly one day. Scrape any extra meat from the bones for the best presentation.
Step by Step Instructions
Step 1
Finely slice 1 shallot very thin and set aside.
Step 2
Finely grate ¼ tsp of fresh ginger and set aside.
Step 3
In a small saucepan, heat 1 tsp of olive oil over medium-high heat.
Step 4
Add 1 tablespoon of brown sugar to the saucepan and mix well to incorporate.
Step 5
Add the shallots and stir until softened, approximately 1 minute.
Step 6
When the brown sugar has melted and is starting to bubble, add ⅓ cup of white wine vinegar.
Step 7
Add 2 tbsp of golden raisins to the saucepan and continue to stir occasionally.
Step 8
While the vinegar is reducing, peel and finely dice ½ of a pear and add to the saucepan.
Step 9
Add ¼ tsp of salt and continue to stir occasionally until almost all of the mixture has evaporated, then remove from heat.
Step 10
Stir the ginger into the mixture and let cool.
Step 11
Preheat an oven to 450 degrees Fahrenheit.
Step 12
Place 6 marrow bones on a baking sheet.
Step 13
Form crinkled aluminum foil between the marrow bones to ensure that they are stabilized and won’t tip over.

Heavily season the marrow bones with salt and fresh ground black pepper.
Step 15
When the oven has heated, roast the marrow bones until the top of the marrow starts to bubble. Approximately 15 minutes.
Step 16
While the marrow bones are roasting, clean and finely chop a small handful of parsley. Set aside.
Step 17
When the marrow bones have finished roasting, remove from the oven and plate immediately.
Step 18
Serve the marrow on toasted baguette slices, top with the Ginger Pear Agrodolce and garnish with parsley.
