Sweet potatoes are tasty on their own accord, but they’re also versatile. These Tom Kha Inspired Scalloped Sweet Potatoes are rich with the Thai flavors of Tom Kha (using ingredients like lime juice, fish sauce, and red curry paste). Plus, they’re thinly sliced and baked to perfection.

Ingredients
  • 1 shallot

  • 2 cloves garlic

  • 2 red jalapenos

  • 2 tbsp lime juice

  • 1 tbsp fish sauce

  • 2 tsp red curry paste

  • ½ tsp ground ginger

  • ½ tsp kosher salt

  • 1 can coconut milk

  • 1 cup heavy cream

  • 1 tbsp butter

  • 3 lbs sweet potatoes

  • Garnish cilantro

Tom Kha Inspired Scalloped Sweet Potatoes

Sure, sweet potatoes might be a dinner go-to. And while you can go the standard route of bake, slice, or mash, we have another option for you: these Tom Kha Inspired Scalloped Sweet Potatoes. For this dish, you’ll grab some of your favorite Thai-inspired ingredients, like lime juice, fish sauce, red curry paste, and coconut milk. After dicing and mincing your aromatics and other ingredients, you’ll combine with coconut milk and heavy cream, before setting aside.


Then, you’ll thinly slice your sweet potatoes, using a mandoline or slicer, and will add them (upright) to a baking dish. After that, you’ll ladle your Tom Kha mixture over the potatoes, before covering and baking in the oven. Garnish with fresh cilantro, and you have a uniquely flavorful sweet potato dish that you’ll want to make again and again.

Step by Step Instructions

Step 1

Finely dice 1 shallot and add to a medium mixing bowl.

Step 2

Finely mince 2 cloves of garlic and add to the mixing bowl.

Step 3

Finely dice 2 red jalapenos and add to the mixing bowl.

Step 4

To the mixing bowl, add 2 tablespoons of lime juice, 1 tablespoon of fish sauce, 2 teaspoons of red curry paste, ½ teaspoon of ground ginger and ½ teaspoon of kosher salt.

Step 5

To the mixing bowl, add 1 can of coconut milk and 1 cup of heavy cream. Mix to combine and set aside.

Step 6

Heat the oven to 400℉. 

Step 7

Using 1 tablespoon of butter, grease an 8×8” baking dish.

Step 8

Peel 3 pounds of sweet potatoes and thinly slice them using a mandoline or slicer.

Step 9

Add the sliced potatoes upright in the baking dish.

Step 10

Ladle the contents of the mixing bowl evenly over the entire surface of the potatoes.

Step 11

Cover the baking dish with aluminum foil and bake in the oven for 40 minutes.

Step 12

After 40 minutes, remove the foil and continue baking for an additional 30 minutes.

Step 13

Remove from the oven and garnish with chopped cilantro. Serve immediately.
